Carrot Apple Ginger Juice

This juice is SO good. I have tried my hand (and my tastebuds) at green juice, and sometimes it is decent, but this one takes the cake for both taste and nutrition.

I first learned about juicing from my friend Jennae. She is a prolific juicer and raved about the benefits, so I’ve been juicing ever since.

I also dug into the research from The Gerson Institute, which is an organization dedicated to helping people with cancer. It was originally conceived of by Dr. Gerson who wanted to find another way to help his patients dealing with cancer. He came up with a juicing protocol that proved to be highly effective in the recovery of his patients.

The Gerson theory on health is that there are only 2 reasons - on a biological level - that people get sick. The theory is that you are either dealing with a deficiency or toxicity.

My own health deals in deficiency. I need to get as many nutrients into my system as possible.

Juicing is such a fast, easy and efficient way of delivering nutrients to your cells without your body having to do a lot of work.

The fibre is removed, so for anyone with a tricky digestive system juicing is such a great addition to your day.

This Orange Juice is both loaded with Vitamin A from the carrots, Vitamin C from the apples and lemons and contains potent anti-inflammatory properties from the ginger.

This juice should be consumed with a meal that has fat in it. As the carrots are full of Vitamin A which is a fat soluble vitamin, it requires fat in your system in order to get absorbed and used properly.

The recipe only has 4 ingredients.

Carrots. I’m lucky that I was able to pull the carrots for this recipe right out of our garden. I used about 1.5 lbs of freshly washed and trimmed carrots.

Apples. I’m equally lucky that I was able to get my apples from our apple trees. I used MacIntosh Apples for this recipe but any apples will do.

Lemons. I really try to only use organic lemons. The skin on lemons is porous enough that I try to source organic for these power fruits.

Ginger. I use a LOT of ginger in this recipe. Probably more than most. I, myself, love the burn that ginger leaves in your mouth. So for me, the more, the better :-)

10 MINUTES 20 MINUTES SERVES 5 - 6

INGREDIENTS: DIRECTIONS:

1.5 lbs of fresh carrots Wash and chop all of the ingredients and add to a juicer.

3 apples of any variety Pour into small glass jars (jam jars work well) and keep in the fridge

3 lemons (skin removed) for 3 days. Freeze the rest.

2 inch knob of ginger
